Tasting notes from March 2004:
A fully saturated color of deep ruby-purple is followed by bright aromas of juicy, fresh cherries and spice, which darken to show licorice, sweet blackberries and dark chocolate. The palate is powerful and rich in its deep black fruit character, offset by complex notes of minerals and dried herb. A pure core of cassis liqueur, wild berries and roasted coffee leads to a broad palate, which is balanced by dark, sweet tannins and a long, cedary finish.
Our 2001 Estate Cabernet shows the concentration of the vintage in its rich texture yet retains an element of vibrancy and elegance. Decanting for an hour in the first 5 years after release will allow the complete integration of sweet, pure fruit, and dense, earthy structure. The wine should increase in complexity over 5 years and hold for a further 7 years.
